How to get a 5-star food hygiene rating as a mobile caterer

How the food hygiene rating is scored
Your rating (0 to 5) is set by an EHO across the same three areas used at any inspection:
- Food hygiene and safety practices
- Structure and cleanliness of the premises or unit
- Confidence in management, including your records and systems
Each area is scored, and the weakest area drags the overall rating down — so a 5 means being consistently strong across all three, not brilliant at one.
Practical steps to reach a 5
1. Nail the daily records
This is the easiest area to improve and the one mobile caterers most often neglect. Log temperatures, cleaning and opening/closing checks every trading day, and keep them ready to show.
2. Keep your safe-method system current
Have a completed SFBB pack (or equivalent) that reflects how you actually work, and update it when your menu or unit changes.
3. Fix issues and write down what you did
A recorded corrective action shows an officer you spot and solve problems — that builds confidence in your management.
4. Get the basics visibly right
Working hand-wash station, clean unit, separated raw and ready-to-eat foods, and clear allergen information.
If you disagree with your rating
You usually have a right to reply, a right to appeal, and can request a re-visit once you've made improvements. Strong records are your best evidence at a re-inspection.
