How the food hygiene rating is scored

Your rating (0 to 5) is set by an EHO across the same three areas used at any inspection:

Practical steps to reach a 5

1. Nail the daily records

This is the easiest area to improve and the one mobile caterers most often neglect. Log temperatures, cleaning and opening/closing checks every trading day, and keep them ready to show.

2. Keep your safe-method system current

Have a completed SFBB pack (or equivalent) that reflects how you actually work, and update it when your menu or unit changes.

3. Fix issues and write down what you did

A recorded corrective action shows an officer you spot and solve problems — that builds confidence in your management.

4. Get the basics visibly right
